Good Eats

I'm usually inspired by either my brother, mom and dad, or one of a few well-known chefs that I follow - mainly Alton Brown and Chef Jean-Pierre. The following is a list of the most delicious recipes that I've made. Many of the dishes are either middle eastern (Syrian) or hispanic (Mexican). Mmmmmmmmmm...




  • Crumbl Cookies Shepard's Pie
    The stores can keep their $5 cookie along with their $5 shakes. Enjoy this Valentine's Day sugar cookie any time of year; the secret ingredient is butter!
  • Tim's Baby Back Ribs & BBQ Sauce
    Marinated. Roasted. Broasted. Baked and then baked again. You've got to try these fall off the bone ribs.
  • Sweet and Sour Sauce
    Mix ketchup with pineapple juice, optionally add chile seeds. That's it!
  • Spaghetti Carbonara
    Cut the guanciale into thick batons. Finely grate the parmigiana reggiano or pecorino. Whisk together the egg, cheese and pepper in a large bowl. Bring 4 quarts of water to the boil with 1 tablespoon of salt. Reserve pasta cooking water. Cook guanciale until golden and toss pasta in guanciale. Tip the hot pasta into the bowl with the egg and use a rubber spatula to scrape out every drop of the guanciale fat into the bowl. Add 1/2 cup pasta cooking water into the bowl. Mix vigorously with the handle of a wooden spoon, spinning the pasta around, for around 30 seconds to 1 minute. Watch as the watery pale yellow liquid magically transforms into a creamy sauce. You know it’s ready when the sauce is no longer watery and pooled in the bottom of the bowl. Instead, it will be thickened, creamy, and clinging to the pasta! Serve immediately in warm bowls with fresh grated cheese on top. Use bacon instead of guanciale and parmesan instead of parmigiano reggiano 175g/6 oz guanciale (pancetta or block bacon), weight after skin removed (Note 1) ▢ 2 large eggs (Note 2) ▢ 2 egg yolks (Note 2) ▢ 100g/3.5 oz parmigiano reggiano , finely shredded (or pecorino romano, sub parmesan, Note 3) ▢ 1/4 tsp black pepper ▢ 400g/14 oz spaghetti ▢ 1 tbsp cooking/kosher salt (for cooking pasta) ▢ 1/2 cup pasta cooking water ▢ 1 garlic clove , finely minced (optional, Note 4) Garnish (optional): ▢ Parsley , finely chopped ▢ Parmigiano reggiano
  • SPAGHETTI CARBONARA This recipe uses bacon instead of guanciale and parmesan instead of parmigiano reggiano, but it still authentic as it uses no cream. --- EMMA'S STIR FRY UDON 1T brown sugar 1T soy sauce 1t ginger 1t fish sauce 1T pad thai sauce 1T siracha 1T gochujang 1T chili crisps (optional) if needed ad bachan sauce stir fry noodles in sesame oil for 2 minutes add sesame seeds drizzle with yum yum sauce (optional) --- BBQ WINGS garlic dried chilis soy sauce small amount mustard vinegar brown sugar --- SALSA? 10 chiles pasilla 14 guajillos 4 tomates 0 tomatillos 1 cabeza de ajo 2 cabollas 6 laurel, 2 pimienta gordaychia 1 mejorana, tomillo, oregano, comino --- Albondigas Tomato and garlic boil and liquify Mince onion and salt after boiling add mint Mix rice with meat egg(?) salt pepper and cook in soup until rice cooked --- FLAN Ingredients: 3 eggs I can condensed milk can evaporated milk 5 tablespoons of sugar . Step 1 Preheat oven at 350° F. Step 2 On a mold place sugar and let it melt until it caramelizes. Put it aside ond let it cool. Step 3. . Then place on the mold cover with foil paper and place it inside oven in middle rack for about 60 minutes.
